Mornings can be crazy around our house so I love to prep an egg bake, breakfast sandwiches or any sort of make-ahead savory breakfast to make mornings that much easier.  These make-ahead muffins are delicious and refrigerate well for the rest of the week.  

Ingredients
  • 1 dozen whole eggs
  • 12 strips regular cut bacon
  • 3 slices white bread, quartered
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2-3  green onions, chopped
  • Cooking Spray
1) Pre-heat oven to 400 degrees.

2) while oven is heating, chop and saute your veggies to desired softness in cooking spray and remove from heat.  *Don’t skip this part- it keeps your eggs from getting watery

3) Spray brownie pan/muffin tin (I used this one) with cooking spray and place 1 slice of bacon around the edge of each spot in the muffin tin, followed by 1/4 slice of bread, 1T of veggie mixture, then crack an egg over the top of the veggies.  Season with salt and pepper if desired.

4) cook in oven for 20 minutes.  Use a spoon to remove and serve right away or allow to fully cool prior to storing for the week.  

5) serve with fruit and of course- COFFEE!
