As I write this, I’m snuggled in a warm blanket, sipping coffee in my basement. The temperatures are finally rising in Wisconsin and like so many the rising temps are raising my spirits. The new season of Spring is also bring some busyness into our home- my hubby has recently started leading a bible study at work, I’ve been taking business leadership classes and completing my weight management specialty, and the kiddos have spring activities beginning.
This week is an especially busy one, we have activities going on 4 out of the 5 weekday nights. I’m exhausted just thinking about it! Weeks like this I’m careful to plan meals that are quick to cook and require little prep so I’m not stressed trying to cram more into those busy days. Since I’m not the only crazy busy mom out there trying to feed her family balanced meals while staying sane I wanted to share our dinners this week!
