Tonight’s dinner Oven Baked Chicken Legs, Salad and Corn.  This combines convenience with homemade goodness in under 30 minutes!

You’ll need:

8 chicken drumsticks $3

1 packet ranch seasoning and 1/3 cup panko or plain bread crumbs and a gallon size bag $2

5 ears of corn $3

1 salad kit (Caesar, Southwest and Sweet Kale are my faves with this meal) $3

Preheat the oven to 400. Mix the ranch seasoning packet and panko/bread crumbs in the gallon bag. Add the chicken legs (you do not need an egg/oil wash), zip close and shaka, shaka, shake it up until coated.

Spray a baking pan with cooking spray and place each leg on the pan. Place in the oven and set timer for 30 minutes.

While the chicken is cooking, start boiling a large pot of water for the corn. This is a super easy boil method. Once the corn is cooked, just let it sit in the pot until ready to serve to keep it hot.

Throw the salad kit contents into a bowl and mix it up. You can always be more cost-effective and make your own salad from scratch, but if time is of the essence salad kits are great!

While you are waiting for the chicken to finish cooking have the family help set the table. Once you’re ready, serve and eat. Enjoy!
