I’m a huge advocate for lazy cooking and repurposing leftovers for another meal. Here is a yummy salad to help you save $ and eat well!
Verde Taco Salad with Verde Ranch Dressing
Using leftover chicken from Slow Cooker Salsa Verde Honey-Lime Chicken, I made this delightfully tasty salad!
For the salad later the following (leave out anything you don’t like or are allergic to)
- Romaine lettuce (2 cups)
- Bell peppers (1C)
- Canned yellow corn (1/2 cup)
- Tomatoes (1/3 cup)
- Cilantro, to taste
- Leftover Chicken (1/2 cup)
- Optional: lime wedges
- Mix 3T Verde salsa with 1T ranch. Drizzle over the top
