I’m a huge advocate for lazy cooking and repurposing leftovers for another meal. Here is a yummy salad to help you save $ and eat well!

Verde Taco Salad with Verde Ranch Dressing

Using leftover chicken from Slow Cooker Salsa Verde Honey-Lime Chicken, I made this delightfully tasty salad!

For the salad later the following (leave out anything you don’t like or are allergic to)

  • Romaine lettuce (2 cups)
  • Bell peppers (1C)
  • Canned yellow corn (1/2 cup)
  • Tomatoes (1/3 cup)
  • Cilantro, to taste
  • Leftover Chicken (1/2 cup)
  • Optional: lime wedges

For dressing:

  • Mix 3T Verde salsa with 1T ranch. Drizzle over the top
